Our vegan Thanksgiving was freaking delicious

This picture was *not* taken this year 😂 This was Thanksgiving 2014! Rob and I were super lucky to spend two whole weeks in Patagonia, in Argentina - we hiked a lot of beautiful mountains, walked on the Perito Moreno glacier, kayaked with seals and saw whales for the very first time. And we celebrated Thanksgiving in Buenos Aires, with a 10:00 pm dinner (classic) and then a lot of alcohol-fueled dancing! We were both pretty strict vegetarians at that point, but made a special allowance for this trip so we could eat all of the delicious steak that we wanted (#noregrets!)

However, its 2020 now and I’m still a vegetarian and Rob is vegan, so our Thanksgiving looked a little bit different. We stayed home (in our pjs, with Walter!) and cooked all day. In years past, we were usually the only plant-eaters showing up to holiday dinners, so we’d always cook ourselves a big lasagna (you cannot go wrong with lasagna, ever). This year, we whipped up:

  • Mulled wine (which I thoroughly enjoyed ALL DAY)

  • Gardein turkey cutlets (were actually pretty good!)

  • Mashed potatoes and vegan gravy

  • Vegan green bean casserole (this is, hands down, my favorite dish of every holiday and I was a little nervous to make it, but I could not tell the difference. Also, thank the vegan gods, but fried onions are naturally vegan!)

  • Apple and sage cornbread stuffing with meatless sausage (okay this was the best thing I’ve ever eaten, probably. And if you’re a meat eater, would taste amaaaazing with chicken apple sausage)

  • Crescent rolls (which, now that I’m writing this, I realized I never checked the ingredients and probably are filled with butter lol!)

  • Vegan chocolate chip cookies! (Delish)

I also want to thank all of the readers who sent me SPECTACULAR vegan recipes of their own (you guys, I’m so impressed!) They were all added to my list of vegan dinner recipes which we’ll be needing to get us through this winter ❤❤
